DENVER: Father's Day and it's Opposite

Hi Denver Chowhounders!

Two Seattle 'hounds are headed to Denver in a couple of weeks for a weekend with my in-laws. I know basically zilch about Denver, and am hoping you can help point me in the right direction!

I need to take my father in law and his wife out to dinner on the big day. Can anyone recommend a moderately nice place (always threading that line with the nice is too nice?) we can go? They are *not* adventurous eaters, and are also somewhat clean-obsessed. And it needs to have the typical parent-friendly elements...not too loud, not to spicy, not too much like a bar, takes reservations...

In the other direction- my spouse and I are serious eaters and would appreciate any other kind of great Denver recommendations for while we're in town. What kind of food is can't-miss in Denver? What are the most fun places to go? I'm happy with super nice or hole-in-the-wall, but I want to find something I can't get at home (i.e., we can probably skip recs for seafood or Asian). Is there something that's hot right now in Denver (for example, in Seattle = gastropubs)? Is there a type of food that is native to the city or a local specialty?
