Have a place in my area called The Meat Stop. Was there yesterday iso something SMOKED to make split pea or bean soup this weekend... ham hock, turkey wings, etc. Their meat is nice and usually at really good prices. They had a LOT of real deli meats, D&W brand, in original sealed packages, WHOLE. Bought a hunka their ham... about 3 lbs @ $1.99 lb. Have an inexpensive slicer that works farily well, so plan to slice some up for sandwiches and snacking, but 3 lbs is WAY more than I'll eat before it goes off.
I know it CAN be frozen, but thawed will not quite be the same. Plan to slice/shave off maybe 1/2-3/4 lb. Thinking about what to do with rest? Can just vac seal the rest, whole, and see what happens later? Or slice up a few thicker pices for ham "steaks"? Maybe cube some up for future soup?
What would you do?
