Deep-Fried Turkey

Had my first taste of deep-fried turkey last night. It was our first attempt and it turned out beautifully. A 20# bird was perfectly cooked in 80 min. It might have taken less time, had the temperature been constant at 350 degrees, but it dipped below that a bit for a little while. It sure was scary lowering that bird into boiling oil. These enterprisig Mainers use the "cooker" for all kinds of things, particularly canning, so their kitchens don't heat up. You sure could boil up a mess of lobsters (or a whole shore dinner) in it too. Pat
