deep fried pork (butt ribs)

My local supermarket in SW CT ShopRite sells “Southern Style Pork Ribs” similar to Country Style Ribs(which I’m never happy with my results-too dry) but cut from the pork butt not the loin. They are pretty lean and cheap when on sale @ $1.49 lb I buy extra for the freezer. Today I want to deep fry them because I have 6 liters of fairly skanky oil in my deep fryer that should be changes soon. I made a paste with sort of a Thai influence and I have them “warm marinating” sous vide. Besides par cooking & flavoring them , this will cook them to a safe temperature. At dinnertime I plan to dry them off and bread with flour, egg and panko then deep fry. I’m on uncharted waters here so if anyone sees a better way I’d appreciate feedback. Does anyone else see this cut of pork in their markets? How do you prepare it? Thanks!
