What's the deal with chicken feet dim sum?

Following the excellent advice of LBQT, I tried Sea Empress for dim sum this last weekend and I enjoyed it all.
Well, almost all. For my last dish, I tried chicken feet. The skin was cold and slimy and there was almost no meat. I didn't want to suck on the bones.
So how is one supposed to enjoy chicken feet dim sum?
Also, thanks to Heather for her excellent recommendation of Hoi Huong on Anaheim in Long Beach.
