I have had a Mineral B country pan for about 2 years. I've been mostly happy with the seasoning on the pan, except that it has lost seasoning on the sides (inside the pan about halfway up the sides). This doesn't affect cooking too much but I'm worried it will spread. Some started flaking off the other night, I think because my wife beat the pan up last time she used it. Not that I told her that.
I can't quite tell if the flaking is seasoning or just gunk that was on there, but is there a reason it would happen on the sides not the bottom? If I need to reseason do l strip everything? I've read about maybe sanding to rough up the surface, frying potato skins, flaxseed vs lard etc.
Not sure if the coating that DB puts on it would come off with steel wool?
