Can anyone recommend a top-notch butcher in the DC area? I live in Capitol Hill and would prefer not to trek miles and miles but I'd be willing if that's my only option.
I'm inspired after reading The River Cottage Meat Book by Hugh Fearnley-Whittingstall.
I do buy at Eastern Market -- I like one of the butchers in particular but the other larger butcher with more options (i.e., a greater variety of meat choices and cuts) doesn't seem that good to me.
