So say you have some free time in the morning or mid day to make a dish that benefits from long simmering. It was massaman curry, but stews or a bolognese would work in this case as well. Do you let it simmer all day - slowly cooking - until dinner time? Or do you let it fully cook, then turn off heat, cool down, place in refrigerator and re-warm for dinner?

I'm seeing two issues at play here: 1) the integrity of the ingredients, will the potatoes or ground beef disintegrate from an all day simmer? 2) Are there safety concerns?

I'll be honest, I'm not too concerned with #2. I too live in a Magic Kitchen.
