I don't do much contributing here but yesterday was my daughters 20th birthday and she had a group of friends over. She wanted a "tapa's" style menu so she decided on the following:
Homemade Guacamole served on Endive (normally I like to put chopped tomato and onion/bruchetta style with my avocado, but she wanted the more traditional version sans tomato)
Individual Shrimp Cocktail(s). Nothing too special here except for the labor, because you know, a platter of shrimp is just soooooo impersonal.
Next we have a variety of sushi rolls: Philadelphia Roll, Salmon with scallion and cream cheese with red caviar. Spicy Philadelphia Roll, same interior spicy crab top. Snow Crab & Spicy Crab Roll. California Roll.
Egg Rolls; a new favorite of mine originally stolen from on of my favorite restaurants. Here I have two varieties, the original Italian Egg Roll, stuffed with broccoli rabe - hot Italian sausage - sharp provolone. The other is a Rueben Egg Roll, stuffed with corned beef, swiss cheese and sauerkraut. Served with tomato gravy (sauce) and russian dressing.
Cold Antipasti: mozzarella, prosciutto, salami, sweet roasted peppers and olives.
Crab Meltaways: toasted french bread slices topped with a cheesy crab sauce and baked. Crab sauce = processed cheese product like velveeta, melted with finely chopped sauteed onions, chopped pimentos, salt & pepper, cayenne pepper, artificial crab.
Potato skins: I kind of cheated on this one, I microwaved the potatos first instead of baking. Hollowed the skins, fried in crisco and butter. Stuffed with a combination of bacon and pork roll which was processed fine, topped with 3 cheese "mexican" blend cheese. (I ran out of stuffing so the others are just plain, or as I explained in case there were any vegetarians. wink wink)
Seared Ahi Tuna Bites. Ahi tuna coated in tuxedo sesame seeds and quickly pan seared, served with wasabi.
