Darkest, Boldest gumbo in NOLA?

I've been planning my long weekend based on all the excellent advice my other post got me. I can not wait. I like my rouxs dark and my gumbo really bold and am a fan of seafood or pork in dark brown sauces. Just re-read that and it sounds odd, but I trust you'll get me. Where should I head?

Definitley more Cajun than Creole, I am ;)
