Looking for inspiration - who has the best Dan Dan Noodles in the Seattle metro area (incl. Eastside) these days?
I used to be a fan of Spiced in Bellevue, but it seems to have changed ownership and Yelp reviews suggest recent problems.
I'm not a purist but a restaurant frequented by Chinese nationals is preferred.
I haven't made an exhaustive survey of Dan Dan Noodles, but I enjoyed the ones we got at Red Lantern. They're in the Starters section of their menu.
I'm no noodle expert either, but I love spicy food and have really enjoyed dishes at Szechuan First in Kent and Sichuanese Cuisine on 12th & Jackson.

My favorite dan dan is La Bu La of Bellevue, which is similar to those offered by its predecessor Bamboo Garden; they offer the hand-shaven variety as well as the conventional style. http://new.labula-dining.com/wp-conte...
I tried Sichuanese Cuisine's version recently and it was terrible, tasting of salty peanut butter with every other flavor muted.
