Dallas- in search of great Asian food (sashimi, pho, dim sum)

Hi Dallas Chowhounds! I just recently moved to Dallas from Philadelphia. Now in withdrawal from great Asian food.

Here is what I am looking for:
Japanese restaurants that have excellent fresh fish. I'm a fan of sashimi, and not that interested in fancy rolls with fancy sauces, so fresh fish is key. I also prefer a down-to-earth place rather than fancy, hip places.
For those of who familiar with PA/NJ area - my best Japanese place was SAGAMI in Collingswood, NJ. So I'm hoping to find a place in Dallas that is similar.
So far I have been to:
Sushi Sake in Richardson. I thought the sashimi was pretty good, except for the tuna. But a bit on the expensive side.
Citizen for a special occasion. Fish was very good, though cannot afford to go there often.

Chinese restaurants:
I go to First Chinese BBQ about 2-3 x a month, but looking for some other alternatives.
Have also found Jeng Chi in Richardson recently, which is quite good as well.
Any other suggestions are welcome.

Vietnamese Pho:
I just want good, basic pho. For those who know Philadelphia, my favorite was Pho 75 on Washington St.

Thai:
Any authentic Thai restaurants suggestions are welcome. Have been to Royal Thai on Greenville/Lovers, but found their food way too greasy.
