So I finally got to use Daiya earlier this week. I bought the mozzarella flavor and use it in chicken fajitas. I grilled red peppers and onions with chicken breast and melted the Daiya on a chipotle wrap.

While the taste unmelted was not thrilling, and the smell in the microwave somewhat gross, the taste and more importantly, the creaminess of the melted Daiya in the final product was a pleasant surprise. Given that this is a typical usage for me--just introducing some cheesy creaminess--I was very happy with how it worked out.
