Customizing store-bought ice cream: Is it possible?

Can I melt a tub of store-bought vanilla ice cream, infuse it with thickened coffee extract and then refreeze it? Has anyone tried this before? Appreciate any tips, advice and experiences with this. Context: We want to make ice cream with local Malaysian flavours. The idea is to sell them in food fairs so we would prefer not to invest in really expensive machines. It's a back up plan if we cannot find a supplier to make the flavours we want too. Thanks!
