For more than 20 years, I've been buying ground meat at my local butcher in midtown East. But now that the owner has cut back his hours, leaving the store in the hands of employees, no one seems to be able to replicate the exact blend of meat used in the past. After much frustration, and several sub-par meals, I am now seeking a new butcher for the very occasional hamburger meal.
I have the ShakeShack recipe from Serious Eats, which calls for a mix of sirloin, chuck and brisket.
I have other recipes that call for short ribs or oxtail to be added in small proportions. And I'd be grateful to learn of any other superb blends that are packed with flavor but not drowning in fat.
However: None of the butchers I've tried so far (Ottomanelli, Florence) are willing to replicate the blend for me, because none will sell me the small quantities of brisket or short ribs, let alone boneless oxtail, that I would need to make 1.5 pounds of burgers (for 2 people) in the proportions called for in the SS recipe.
Where can I find a butcher who will customize a blend of ground beef in the quantities I need? Or a butcher who has a terrific house blend? To be clear, I am looking for the butcher to grind the meat; I am not grinding at home. I know that Eataly sells the LaFreida blend in packages and I might try this someday, but I was really looking for fresh-ground meat. Please not on the UWS!
