Custard base for homemade ice cream - questions

I made my first batch of custard base and never could get it to coat the back of a spoon and it seemed to take forever to get to 160 range. I kept wanting to turn up the heat but I know that would cook the eggs. How long does it usually take once the tempered eggs are added into the pan with the milk/cream before I should expect it to reach temp? Should I be using a double boiler instead of just regular saucepan? I've been trying to figure out if I could use instant pot for making the custard base but no luck so far.
