Robuchon's Monaco restaurant, previously discussed on the board, now has Christopher Cussac as its exec chef, according to Bonjour Paris.
Cussac began training with Robuchon, and stayed for at least 7 years. Then, for 10 years, Cussac served his family's restaurant (l'Abbaye Saint-Michel) at Tonnerre, where he earned two Michelin stars. Then, Cussac was the chef at Réserve de Beaulieu.
This might explain why Reserve de Beaulieu lost its second star this year.
According to lechef.com, Olivier Bruland of Hotel de la Pinède at Saint Tropez will move into Cussac's spot at Reserve de Beaulieu. Bruland had trained with Roland Durand, and was the sous-chef of Michel Guerard for a few years.
The Pinede will in turn be taken over by Arnaud Donckele, who had previously worked with Alain Ducasse at the Plaza Athenee (not necessarily just recently?).
