Curry Udon Soup--How to make?

I seem to have had (and have right now) a lot of colds this season, and there are still a few months to go. The soup that's the most comforting and best able to cut through my symptoms is a curry udon soup with vegetables that I order as take-out from a local "pan-Asian" restaurant (I'm in NYC--it's called Caffe Swish and is across the street from Columbia).

Does anyone have any idea how I can make something like this at home, easily? I make my own chicken stock, so that's not a problem, but the soup has just the right amount of heat and great mouthfeel, and I can't guess how they do it. The veggies they use are julienned carrots, chopped cabbage, and some sort of dark brown mushroom.

Any recipes/cookbooks/suggestions welcome.
