Curry paste basics?

Having only recently joined the blender-owning classes, I'm trying to puzzle out the basics of curry pastes (especially Indian-style). Are the prepackaged ones essentially for convenience, or is there a significant benefit to making one's own pastes, as a separate step, rather than just doing everything "one pot"? I'm also a bit confused as to why some recipes use a spice-based paste, whereas in others the paste is simply a vegetable puree, with the spices then added separately. Is the one for different reasons than the other? (Veg cooking method, or for texture?)
