The thread on Ai Japanese and other bad restaurants got me thinking of how on earth these places stay in business, and with so many hounds out there who truly care about food and atmosphere, ect....have any of you ever seriously considered opening a restaurant? Or even changing careers and working in one? Obviously, I realize that appreciating food and running a restaurant or even a small cafe are two entirely different things, but I do enjoy dining at places where the staff and owner clearly have a deep love of food and pride in creating experiences for their customers. Sometimes I wonder if I chose the right career (music business- don't laugh) and wonder if I will ever regret not going to culinary school or rolling up my sleeves and baking bread at a small coffee house, or even writing about food. Since everyone here has a knowledge or all things food-related, I'd like to hear your stories on this matter.
