I'm curing a 1lb piece of tuna in the fridge, as we speak. I just looked at it, and (as expected), a lot of water has left the fish. The fish is sitting in a bowl, so it's now sitting in the water. Should I have put it on a raised platform to allow the water to fall to the bottom without the fish sitting in it? I'm curing it for 3 days, and it's only been a couple of hours, so if I should do that, let me know and I'll change it now.
The dry cure I am using is salt, brown sugar, garlic, shallots and coriander.
