My First Curd: Key Lime Bars

So, as I mentioned in my Key Lime Pie post, I was left over with LOTS of Key Limes. Wanting to continue my baking education, I knew the perfect thing to make with them! Key Lime Bars! YUM! Lemon Bars are my favorite things in the world and I've always wanted to try Alton Brown's Lemon Curd Recipe (I've had that good eats episode on my Tivo FOREVER!). Further, I had made Cherry Bars Strudel Bars before and LOVED the recipe for the crust and Strudel... So with these two recipes I was off to make the most wonderful dessert bars in the world...

I started with the Curd. Although a bit fussy in preparation, it turned out pretty good!! I was cooking my lunch at the same time (Poaching chicken) and then went off to do girly evening things while the chicken cooled...

I came back about half an hour later to shred my chicken and saw there was a stick of chopped up butter on my counter... ACK!!! I had forgotten to add the butter to my curd!! Luckily, it was still warm, so instead of carefully plopping each piece and melting it accordingly... I kinda dumped all the pieces and stirred like crazy... It all integrated well, tasted great still and put it in the fridge for the next day to make my bars!

The following day, I checked on the Curd again. Nice and thick and very much like a pudding! I prepared my crust and then started to put the whole thing together... Poured the curd over the thick crust, then began to place the strudel... and then, the strudel started to sink... ACK!!!!

I knew at that moment, I had ruined it. Stilly me, I should have waited to bake and firm up the curd a bit before plopping on the strudel! :(

Anyway, I thought, perhaps it will add an interesting texture and put it in the 350 oven anyway...

10 minutes pass, and I check on the bars, they look okay... and I go back to girly things...

10 more minutes pass... ACKKK!!!! I fling open the oven and see the top of my bars have turned brown... Almost like a torched meringue!!! That was it... they were totally GONE...

I put the bars to cool and then wrapped them up to toss in the morning, and wrote the BF an e-mail to let him know his co-worker were not going to get their key lime bars this week. *sigh*

This morning, I was ready to trash them, when I just took one bite. Taste wise, it actually was pretty good. Appearance, HORRID. It looks like lemon meringue bars, the curd is translucent jelly on the bottom, and then foamy opaque on the top (Of course browned), and then, there is little strudel rocks within. I got the idea, if I break them apart, perhaps it could be like a key lime cobbler thing... I dunno tho'... BF will be by this afternoon to assess the damage and have a good laugh I'm sure... LOL!!

Looking back on this disaster (Not my first, you guys should have seen my blue berry hockeypucks)I know I probably should not have combined recipes. Perhaps Alton's Curd is not a good one to bake. Or the butter thing doomed it from the start. I WILL try this again (Because I still have so many keylimes!) but this time with a proper lemon bar recipe. I got too cocky in my recent baking successes, time to pull back and stick to the books! :)
