A culinary technique book for the essentials

I'm looking for a book (or video series perhaps) that is an encyclopedia of the fundamentals of cooking. I.e. roasting meats, how to make a stew full bodied and flavorful, frying, soup etc. I'd like to be able to open a book and get the canonical form on how to roast a chicken.

I have On Food and Cooking - this is great for information about ingredients and the micro level of specific foods, but the section on cooking methods is a bit thin.

I also have Pepin's book, Complete Techniques - this is also great, but it focuses a lot on preparation and presentation.

I've also looked at the Modernist Cuisine book. This has some stuff about basic techniques, but mostly is about advanced technique.
