Hi 'hounds

I don't know if this has been done before, but it should have been!

By culinary region, what are your favorite Chinese restaurants (and best dishes?) I'll start with my favorites... please add regions that I have overlooked

China Islamic (dough slice lamb soup)

Mei Long Village (rice cakes, xiao long bao)

Cantonese/Hong Kong/Dim Sum:
Ocean Star for dim sum (in equal parts for the authentic feels-like-I'm-in-China-hustle-&-bustle atmosphere, as well as for the food. NYC Seafood in

Monterey Park (but it's been a while, don't remember what I ordered but it was delicious)

Still trying to develop a taste for pig's ears and stinky tofu

Only really been to one... Lucky Dragon, ordered the chili fried chicken cubes in mounds of hot peppers... couldn't handle it. Must try again.

Hot pot:
Little Sheep (technically mongolian, but the broth contains lots of chinese medicinal herbs and hotpot is a mainstay of Chinese family dining)
