Cryovac pork loin odor

virtualmelissa | Dec 26, 201609:50 AM     16

Hi,
I've never cooked pork before and am trying to do so today. I bought a 2-pound pork loin roast about a week or two ago and its sell by date is Jan 7. When I took it out of the package it had a bit of an odor that I didn't like, but I figured that's just raw pork. I plunked it in the marinade and put it in the fridge.

But now that I google, people say pork shouldn't smell *except* in the cryovac bags sometimes and that folks rinse the smell away.

I didn't rinse.

Please advise. I'm both paranoid about food safety plus a complete newbie, so I just don't trust my own judgement!

Thank you.
