My very favorite fruit pie; actually my favorite pie, period, was one I used to get, through early teens, in a local restaurant in VA. It was One crust, filled with fresh strawberries and a little binder , set-up and topped with thick layer of whipped cream.No rhubarb, no corn syrup; I guess you'd say it was the pie equivalent of an open faced strawberry shortcake (with a little added binder). I haven't seen one like it for ~50 yrs. If anyone ever sees it around, PLSE post! thx so much.
