One-Crust Fresh Strawberry Pie- Anyone Seen?

Question

My very favorite fruit pie; actually my favorite pie, period, was one I used to get, through early teens, in a local restaurant in VA. It was One crust, filled with fresh strawberries and a little binder , set-up and topped with thick layer of whipped cream.No rhubarb, no corn syrup; I guess you'd say it was the pie equivalent of an open faced strawberry shortcake (with a little added binder). I haven't seen one like it for ~50 yrs. If anyone ever sees it around, PLSE post! thx so much.

I make a mean one, but I don't have the recipe here at work. It's straight out of a Betty Crocker or one of my other classic cookbooks though. Cornstarch, sugar, water, strawberries (a few mashed into the glaze, most whole), a blind-baked pie shell, that's pretty much it. They do not need gelatin to set up properly, ew. 

How good it is depends 100% on how good the strawberries are. They need to be decently firm without being underripe, too -- the texture is important. Use any slightly soft ones or ones that you've had to mangle removing bad spots as the ones you put into the glaze. 

I think this is it, actually -- I skip the cream cheese.

Mann's Orchards in Methuen MA - just bought one yesterday - 13.50 for 10" pie. Just as you described above. Delicious. I had to wait because they were sold out at 2:00 but took my name to hold one as they were bringing out more a little later that afternoon. Worth the wait!

I don't have a recipe, but have made strawberry pie using a pate sucree crust, a little pastry cream in the bottom, and hulled ripe strawberries more or less artfully arranged on top of the pastry cream. To make them shiny, melt some red currant jelly and brush on top of the berries, but you don't have to do this. Best eaten the same day it is made, but it will still be delicious, if a bit soggy, the next day.
