Hi, I’m making a hummingbird cake that calls for “Crushed Pineapples in Juice”, like the Dole ones that come with natural juice. The recipe says to reduce the juice by boiling it and include that in the cake.
However where I am, these are not available and they only have tinned pineapple cubes in heavy syrup. I’m thinking if I use these the cake will turn out extremely sweet. Any ideas for what I could do? Maybe rinse the tinned cubes, smash them up in a food processor, then extract some fresh juice from fresh pineapple and reduce it ?
