The thread below about clotted cream reminded me of a question I've been meaning to investigate for quite a while. I was able to visit York, England a few years ago and I frequently ate at a tea shop there named Betty's. One of my favorite items on the menu was Yorkshire Crumpets. In texture it resembled a cross between an English muffin and a crepe, but it was wonderfully light and buttery. I have searched for a good crumpet recipe since then but all of the ones I've tried have not lived up to my memories. One in particular was horribly yeasty and had to be thrown out.
Does anyone have any recommendations so that I can reproduce this wonderful treat at home?
