"Crudo" at Home -- more raw fish experiments

C. Simon | Jun 30, 2002 10:10 AM

I have become addicted to the salmon sashimi at Bread and Circus on River Street.

Today, I got a box of salmon and tuna sashimi. When I got home, I found that the soy sauce was missing. So after enjoying a few slices without soy, I decided to experiment.

I remembered Esca, a NYC Mario Batali restaurant, where I was amazed by the "crudo" -- sushi Italian style. I remember being amazed by the pure, clean, flavors of the fish which were barely adorned with anything more than olive oil, salt and pepper. So, I went to the cupbaord and found a nice bottle of olive oil from Formaggio Kitchen. A few drops of olive oil, a little salt, a little pepper, and I was practically back at Esca!

This will likely have to be repeated.
