crock pot

I understand high and low settings on crock pot is just how fast get to simmering point. But what happens after reach simmering point and on high setting? Seeing that each crock pot on high range from 212 to 300. Wouldn't the ingr, in the pot at high begin to boil bec. at 212 or above.....making the food cook faster?
