The croaker was very fresh at the fish market today, so I bought a couple and had them butterfly them for me. So they're whole, with the bones removed, except for the backbone.
This is really an experiment -- I've never had croaker before and I'm not sure what to expect regarding how it cooks and how it tastes, but I'd like to put it on the grill tonight. What should I do/not do to have a delicious meal? Thanks.
