Crepes suzette recipe with meringue filling?

Double Gloucester | Jun 4, 200801:47 PM

When I was taking French in high school, back in the mists of time, our teacher once had us do an exercise that involved taking turns in front of the class with an empty mixing bowl, measuring cups, spoons, etc. and miming the preparation of crepes suzette, according to an especially elaborate recipe. It called for the crepes to be stuffed and baked with some sort of meringue filling (maybe meringue mixed with a custard-type sauce?) along with the orange-zest sauce. Then they were supposed to be flambeed after baking.

Can anyone help me find a recipe for this version of crepes suzette? My language skills have deteriorated, but if the only sources you can refer me to are in French, I'll be more than happy to review. Thanks!

(Btw, the lesson ended with our teacher, an excellent cook, serving us the actual finished product that he had made at home. It was fabulous. Except that the flambee step had somehow gone wrong--so when our principal stopped by the class for a taste, his eyebrows flew up as he bit into the crepe and got a hit of unevaporated alcohol!)
