This time every year when Jazzfest is going on I start to crave it. I can get it shipped (http://www.cajungrocer.com/creole-lun...) but $5.50 each plus shipping is pretty steep and I'd like to try to make it.
I can figure out a good spicy meat stuffing, but I'm wondering if anyone has ideas for the bread. Looking at various stuffed bread recipes some use a whole french loaf, or a pizza/calzone dough, or a roll. Many seem way too large, or too bready, or too chewy (pizza dough).
If you aren't familiar with them, the real pies are single-serving, about the size of a McDonald's fruit pie, only more rounded. The bread shell is thin and soft, with a firm enough exterior to hold it together without getting messy. The proportions are just right, so that the bread provides some contrast to the spicy stuffing without diluting the flavor of it.
Anyone have a good recommendation for a bread recipe I could start out experimenting with?
