Creole for foreigners

I'm a Louisiana transplant living in Denmark and want to make a special meal with creole roots for a group of female colleagues. I'm somewhat limited by ingredients, but pretty good at making do. Still, I could use some inspiration since it's been a long time since I have eaten in NO or La in general.

I'm thinking of starting with a small cup of crayfish and corn bisque (cream based) and then maybe a small plate of sautéed shrimp on a dollop of grits/polenta. I realize it's been done to death in the US, but it would be unusual for my guests. From there I'd like to do something other than seafood, because I don't want any potentially picky eaters to go hungry. I also don't want anything too terribly heavy, preferring to serve several small dishes. Dessert suggestions would also be welcome!

Any suggestions?
