Creme Fraiche separating in dressing

I made a dressing with creme fraiche, white vinegar, extra virgin olive oil, honey and some spices. I added everything into a quart container and mixed together with a stick blender and stuck it into the fridge. A few hours later, the dressing seemed to separate and there was a white, frothy, curdy substance on the top. Anyone know what/why this happened and if there's a solution for this problem?
