Creative Veggie Sushi

I'm going to be a new transport to NYC for the next four years after studying in Chicago. I've spent the last two days trolling Chowhound, NY Mag, and as many food blogs as I could get my hands on to pull together a list of what to eat while I'm in school here.

I found a ton of recommendations for the usual stuff (a ton of Asian- and South American-associated places, Italian food, new Brooklyn indie food producers, bagels/pizza/etc), but I wasn't able to find anything on places serving veggie sushi. I can't enjoy the beauty of raw fish, so the next best thing for me is what many would consider the semi-bastardized maki rolls with crazy flavor combinations that taste really good.

Does anyone have any ideas for a place like that (ideally less than expensive)? To give you a point of comparison, the Veggie Crunch at Meiji in Chicago:

"Veggie Crunch
sweet potatoes, cream cheese, avocado, tempura crunch, wasabi mayo and unagi sauce...11"

Thanks very much!
