Getting creative with lentils

Hi all!

So I love the texture and versatility of lentils. I want to make beluga lentils to compliment salmon fillets. The basic mirepoix method or the lentil stew is delicious but I want to go beyond that. What are some different ways you've elevated your lentil dishes ? Spices?herbs? New Combinations ? Let's hear it.
