Creamy Pasta Sauce Substitution

I want to make a creamy pasta sauce with mushrooms using a recipe that calls for cream. I usually have skim milk around, does anyone know a substitution I can use for the sauce (maybe adding lots of butter or using eggs to thicken the sauce)? I've heard that just straight up skim milk will curdle and won't be thick enough. I'm not trying to cut the fat, just wondering if it's possible to use the skim milk I usually have instead of going grocery shopping.
