Creamy pasta sauce with onions, garlic and 2 cheeses

125g of butter ( never really measured it, just enough to cover the bottom of the pan so the onions don't stick)
150-200 ml of cream ( depends on your liking)
1 cup of boiled pasta water ( very important ! )
Dried Oregano
Half of a white onion ( diced finely)
3-4 garlic cloves ( minced)
Salt. Pepper to taste
Parmesan ( 100 g)
Mozzarella ( 100 g )

Melt the butter over medium heat, when it starts to sizzle add the onions and the garlic. Cook until tender and translucent but do not burn the garlic. After approximately 3-4 mins add the cream. Once the cream is in increase the heat to high and let the cream boil for 5-10 seconds, it should start to boil near the edge of the saucepan. After this immediately reduce the heat to low and add the parmesan and mozzarella, salt, pepper and oregano and mix for a few minutes. Let simmer for 5-10 minutes and add the pasta water, reduce to your consistency of choice. When adding the pasta to the sauce to finish cooking the pasta add parsley and additional cheese to serve.
