A couple of weeks ago on an out of town trip, DH and I enjoyed a cream of artichoke soup with a little bit of blue cheese crumbled on top. We agreed that cream of asparagus soup would be great that way, and last night I tried it, and indeed it was. (Another idea for the asparagus thread earlier this week.) I'm trying to keep off some weight I recently lost :), so I made it with skim milk and yogurt instead of whole milk and sour cream, and it was still awesome. Do you think that the blue cheese would go with pretty much any green vegetable-puree-based soup? Spinach? Zucchini? Has anyone else already tried this? It was new to me.
