crazy questions

Since this is our first trip, having no idea of distances, neighborhoods and walkable places...we are staying on Champs Elysees - we are 4 people just touching 60 - and although I realize it is important to slow down and take it all in - stopping to smell the roses - I feel so pressured to be sure to get to all that we would like to do and see and enjoy great food all the while. Would you suggest we plan our dinners in the areas we will be traipsing or do you think we might go back to our hotel to freshen up for an evening? Of course, this is difficult for you to know but since we don't know how close/far everything is from each other...
Can you suggest a good first night restaurant? We are probably doing the hopon/off bus that first day and perhaps the Arch and maybe Eiffel Tower (these two seem to be in the general vicinity of our hotel?). I am wondering if it makes sense to walk to Chez L'ami Jean and if it is a good first night dining spot.
