Craving proper Al Pastor tacos and crusty carnitas...

I'm sure I've just been looking in the wrong places, but I'd love to find a good al pastor taco, as served some places in Mexico--nice red and charred, on a rotating spit, a sliver of pineapple skillfully flipped through the air...

I've ordered al pastor various places in LA, but it never comes close to my Mexico experiences...

If you also happen to know of fine flavorful carnitas with lots of crispy brown/black edges, I'd be additionally grateful...
