I was craving some Kimchi, I know not too normal, but hey I just wanted that flavor profile.
I went quite beyond that at Land & Water Company in Carlsbad. Started at Happy Hour with Kimchi and Crispy Beef Skewers.
The Kimchi was prepared like a pickled interpretation, not fermented. The cabbage was slightly crisp and tangy with a slight kiss of heat. There were also some pickled carrot and onion slices as part of the Kimchi.
By no means authentic, but clearly a good variance and version that would be more acceptable and 'sellable' to the American palate. I thought the dish was well assembled.
Next; the beef skewers, amazingly tender. A long slow braised process that came with pickled daikon, carmelized soy sauce, horseradish whipped Japanese style mayo. Wow, quite flavorful and juicy. The caramelized soy gave the outside a nice crust with a hint of sweet. The Japanese mayo was a perfect dipper for the beef. I could have been satisfied with that a a glass of wine.
OK, that was so tasty on to dinner.
Next; Pork Bourguignon, yes 'pork !!' A nice sized portion of bone in pork short rib (great start the bone gave some much depth), cabernet demi-glace, a thin layer of creamy smooth potato puree, braised carrot, charred cippolini onion. The braised carrots were prepared in 'the round' about an inch tall with the charred cippolini perched on top of the carrot rounds. Also, the demi was not over powering.
Last; Pan Roasted Halibut. This was the fresh seafood offering of the day, a seared fillet in butter with roasted pots and mixed root veg. The halibut was flaky tender and mild.
The nice part was that all of the above are easily shareable as the portions were very generous. I enjoyed the variety of all the differently executed flavors.
Their menu also has a good selection of sushi, sashimi and specialty rolls. Will tackle that on my next visit.
Service was professional and attentive without being an annoyance. Prices were very reasonable given the level of prep, locally sourced ingredients and portion size.
They are located in an area with parking, nice.
