cranberry bread season! (recipe)

It's cranberry season (or, more precisely, the season when bags of cranberries start showing up in the supermarket) and my kitchen smells so delicious right now, I had to share what I'm baking (or at least the recipe...) The best cranberry bread I've ever made comes from the first Silver Palate cookbook. Moist, tender crumb, not too sweet, good balance of orange/cranberry/nuts, and not loaded with tons of sugar or oil like a lot of quick breads. Try it! Gorgeous toasted with butter. A very rough paraphrase, below. Enjoy!

Cranberry Bread

Preheat oven to 350F. Grease a loaf pan.

2 cups flour
1 TB baking powder
1/2 cup sugar
1/2 tsp salt

2 eggs, beaten
3 TB melted butter
2/3 cup fresh orange juice

1 cup cranberries
1/2 cup walnuts, chopped and lightly toasted
2 tsp. grated orange peel

Mix dry ingredients in a big bowl. Stir wet ingredients together in a small bowl or measuring cup. Pour wet mix into dry, stir together until just combined. Add cranberries, nuts, and orange rind, and stir lightly. Spoon batter into prepared loaf pan. Bake 45-50 minutes, until lightly browned and a toothpick comes out clean. Cool for 15 minutes, then pop out of pan onto a rack to cool.
