I'd like to recreate a couple of tasty treats I recently had in Sri Lanka. One is wattalapan ... though I've found a couple recipes on the web they don't sound as if they will produce a particularly wonderful partly cakey-partly custardy version (as opposed to all custard) I ate in Kandy. Also, the recipes require "steaming" .... does this mean in the oven in a hot water bath, or must I actually steam them on top of the stove?
Another treat I'd like to make I don't know the name for --- purchased in a bakery. A dark brown combo of coconut and (I'm guessing) semolina flour? The texture was moist but not sticky, slightly grainy, very spicy (cardomom?). Cut into bars, it was studded with raisins and, perhaps, finely chopped cashews.
