Hi, we are visiting Tokyo in the beginning of June. Could anyone recommend a sushi restaurant where it is not impossible to make reservations? We are staying at the Park Hyatt, but they have not been successful so far. We typically go to Sawada, but apparently is only open to regulars. I also have a weird (embarrassing) question. I always wanted to go to a unagi restaurant, but I have seen videos in which they cut the eel alive, the same with some crab places. I do not agree with this practice. Do you know of this is a standard practice or only some chefs do this?
