I'd like to grill some nice, meaty ribs but would like to avoid watching over the grill for hours. One method seems to be boiling the ribs for a half hour, then marinading and grilling. Does this take away too much meat flavor? I've also seen instructions that call for covering the ribs in foil - but wouldn't this prevent the smoky flavor from entering the ribs? I have a basic, hooded Weber grill, if that makes any difference. Thanks in advance for any advice!
