Côte d'Azur in early July

Hello all, was hoping for some advice on an itinerary with my wife sans enfants in early July on the Côte d'Azur. We'll be staying in Cannes, but thanks to some older posts I have a rough idea:

I've confirmed at La Table du Chef in Cannes on the Friday night - sounds like the 'menu surprise' proposed by Bruno Gensdarme based on the daily produce markets could be fun on a warm July night.

We've made a reservation for lunch at Mirazur in Menton on the Saturday (oh yeah!), as well as for lunch on the Sunday at Bacon on Cap d'Antibes (an institution? Yes!), but other than that we're open and looking for ideas.

I'm intrigued by Bar des Oiseaux and Le Comptoir du Marché in Nice - both sound like fun. A collaboration with Maison Barale, yes please!

Is Chez Pipo a must for socca or could we cheat and skip it? Have a feeling my wife would appreciate Fennochio's magic pistachio gelato more than a chick pea flour gallette?!?!

Other places that caught my eye were Mantel, Le Park 45, and La Tonnelle in the Cannes area, and Flaveur, Jan, Geppetto and Voyageur Nissart for cuisine Niçoise in Nice. As always time, money and stomach capacity limit our choices !

But do any of these merit a "must visit" alert from hounders? Or is there somewhere else you would recommend? As always, thanks in advance for any advice, valuable reconnaissance or relevations for us!
