Costco "Rotisserie Chicken Cooked Breast Meat"

So I've read about it before, then bought some on a whim several weeks ago, and now want to use it in a recipe for "Chicken and White Bean Chili" http://www.epicurious.com/recipes/foo... for a potluck. My question is about the use by date. It is 11/21/2016. That would make it about a month from when I bought it. How is that possible? Granted, it is vacuum packed, but would you trust it for a potluck?
