I've cooked a few before just want advice about this one.
I have 12 -12.5 hours to cook and serve. Planning on putting it in and 4:30 or 5am.
My questions are:
1) What's a good temp to keep it in the oven for 12 hours since it's about 13.5 lbs?
2) How long is a good cool time? (From Oven to slicing).
